Our Process
Everyday at Café Don Paco we strive to produce the best coffee in Nicaragua. Producing superior quality coffee is not easy, you have to follow a very strict guideline of rules and procedures to make sure quality is maintained at its optimum level throughout the different processes of production.
At Café Don Paco we are always checking to make sure the coffee quality is at its best. One of the ways we ensure you are getting the best quality possible is by cupping every lot at least three times at our dry milling facilities in Matagalpa before we get ready to roast large quantities of coffee. We have a team of highly qualified cuppers that have participated in many international cupping competitions such as the Cup Of Excellence.
